This is the only lemon loaf recipe you'll need! The combination of tart, sweet, and moist make this loaf hard to resist a second slice.
Ingredients:
1 1/2 cups all purpose flour
2 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
1 cup Greek yogurt
1 cup sugar
3 eggs
4 lemons
1/2 cup vegetable oil
Lemon Glaze:
1/2 cup sugar
1/2 cup fresh lemon juice
Directions:
Preheat oven to 350F.
Spray an 9" loaf pan with cooking spray and line with parchment paper, set aside.
In a medium bowl mix together flour, baking power, and salt - this is your dry ingredients, set aside. In a large bowl mix together sugar, eggs, and oil. Once the egg mixture is mixed well add in vanilla, yogurt, zest from three lemons, and the juice from half a lemon - mix together well.
Add dry ingredients into your wet ingredients, mix together until everything is smooth. You can use a whisk or beaters on medium speed. Pour into lined loaf pan. Depending on your oven, it can take between 50 to 60 min to bake, insert wooden skewer to make sure center is cooked before removing from oven.
While loaf is baking make the glaze. Add fresh lemon juice (from the lemons you zested) and sugar into a small pot, cook over medium heat until sugar is dissolved. Set aside.
After removing loaf from oven, allow to cool for 10 min. Once cool, poke top of loaf with a large skewer, making small holes all over. Slowly pour the glaze over loaf. Sprinkle a little lemon zest on top. Cool before serving.
