Happy Cinco de Mayo

I normally have a feast planned for today and invite some of my amigas/amigos over for a night of bottomless margaritas. However, this year we'll have to celebrate virtually since we're still physically distancing.


Since I'm not cooking for a fiesta this year, I've decided to pull some of the must have dishes from friends and share them with you. Regardless, Mexican food is perfect for any occasion so keep these ideas in mind for your next fiesta.


Jug o' Margarita


No doubt about it - you need to serve my Jug o' Margarita's! Don't forget, these are strong so make sure you also serve some cerveza's and water along side.


Elote

If you haven't tried Mexican Street Corn or Elote you've been missing out! Grilling the corn first gives it a nice smokey/grilled flavour, although the creamy cheesy topping gives the whole dish a warm sweetness. It's so hard to explain how delicious this dish is, my mouth is watering as I'm writing this. Make sure to serve lime wedges along side for an extra zip.


PICO DE GALLO


I make Pico all summer long and with whatever I have on hand. I like to toss in fresh strawberries or pineapple and serve it on grilled fish. Or, add a little more spice and serve on grilled flank steak with some fresh tortillas. Just think of it as a salsa but using fresh ingredients - plus it's vegan and gluten free!


Guacamole


Ahhhhh Guac! I love mine a little chunky with a ton of lime, I drive Megan crazy when I tell her to add more lime. Whoever invented Guac needs a medal - what would we do without it?!? Just a little tip if you're making this ahead you need to cover it with plastic wrap directly on top, otherwise it will brown. Another small tip - if you are concerned with your avocado's ripening too fast put them in your crisper, this will help them stay firm for a few more days.


Queso


Now to warm things up with some creamy Queso! Another delicious dish you should be serving for any occasion. Who doesn't love some cheesy goodness? Plus, you can make this in a crock pot and keep it on warm until you're ready to serve.


Carnitas


This staple dish is the kingpin of traditional Mexican food. Top off these tender morsels of pork with freshly made pico, a pinch of lime and a little cilantro and you'll have a hard time having just one. Just make sure you don't use lean cuts of pork, you'll want something like a shoulder or butt roast for optimal tenderness.


Mexican Rice


Mexican or Spanish makes the perfect side dish for any Mexican meat dish. I like mine muy caliente but you can control the level of heat and the flavour remains the same. This recipe keeps it simple, but if you want to add red or green peppers, peas, corn, or onions then go ahead. Just remember to use long grain rice for the right fluffiness.


Fresas con Crema (Mexican Strawberries and Cream)


After eating all of this delicious food you'll need something light to finish it off. This fresh dessert calls for only a few ingredients and is super quick to prepare. We tend to save dessert for later in the evening so we have a chance to really enjoy it.


I'm so happy to share some of my favourite Mexican dishes with you. I only wish we could be having a Cinco de Mayo fiesta together, but this is just a good excuse to plan it as soon as life gets back to normal.
