Slightly warm, with a crisp sugar topping, combines the flavors of this dip magically. With the addition of caramelized bacon and shallots this dip will be a showstopper at your next party.
Ingredients:
4 oz softened cream cheese
200 g feta
1 tbsp cream
2 tbsp honey or maple syrup
1 head roasted garlic
3 slices bacon, cut into chunks
3 shallots, diced
1/4 tsp freshly grated nutmeg
1/2 tsp dried thyme or 1 tsp fresh thyme
1/2 tsp fresh cracked pepper
1/2 tsp salt
1 tbsp sugar
Directions:
Cook bacon until it starts to crisp, add shallots and cook on low until both bacon and shallots are soft with a slight caramel colour. Drain fat and set aside to cool.
In food processor, whirl together cream cheese, feta, honey, roasted garlic, and cream until smooth. Add in nutmeg, thyme, salt, pepper, and the shallot/bacon mixture. Process again just until everything comes together, don't over mix.
Transfer mixture to a oven proof dish and bake at 350 F for 10 min. Remove from oven, sprinkle sugar on top and caramelize, either with a blow torch or place under broiler. If using broiler keep an eye and rotate a few times so it caramelizes evenly.
Serve with toasted bread, crackers, or thinly sliced pears.
